Ingredients
¼ cup vegetable oil
1 cup fresh or frozen cranberries
¼ cup chopped onion
½ cup chopped green pepper
¼ cup sugar
1 teaspoon ginger
½ cup fresh pineapple chunks
1 small tomato, chopped
Method
1. Heat oil in a skillet. Saute cranberries, onion, pepper, sugar and ginger just until cranberries begin to pop, stirring frequently. Stir in pineapple and tomato and cook until heated through.
2. Drain off any excess liquid. Transfer to serving bowl. Serve warm.
