Ingredients
¾ cup vinegar
1 cup oil
¾ cup sugar
1 tablespoon salt
1 small onion, diced
1 4 oz. can pimento, drained
1 green pepper, seeded, chopped
1 small carrot, diced (optional)
Method
Place all ingredients in blender in order listed. Cover and run on “chop” just until vegetables are chopped, about 10 seconds. Chill, shake before using. Yields about 3 1/2 cups dressings.
