Ingredients

 7 ½ pounds water melon rinds, before boiling

salt water

BRINE

 3 ½ pounds sugar

 1 pint vinegar

 ⅛ teaspoon oil of cloves

 ⅛ teaspoon oil of cinnamon

Method

1. Bring watermelon rinds to a boil in salt water. Drain thoroughly.

2. Place in brine.

3. Let stand in syrup for 3 days. Reheat syrup each morning. On the 4th day, seal while syrup is hot.
