Ingredients
1 cup evaporated milk
1 cup milk chocolate chips
1 cup miniature marshmallows
1 teaspoon vanilla
vanilla wafer cookies
1 quart peppermint or vanilla ice cream
¼ cup peanuts, chopped
Method
1. Mix first three ingredients together in a heavy saucepan. Stir over medium heat until chips and marshmallows melt completely, boil until mixture thickens. Remove from heat and cool to room temperature, stir in vanilla.
2. Line bottom and sides of a 9″ pie pan with whole vanilla wafers. Spoon half of softened ice cream over wafers, top with half of the sauce. Repeat with remaining ice cream and remaining fudge sauce. Sprinkle with chopped nuts. Freeze over night. Serves 6 to 8.
