Ingredients

 1 cup butter

 2 cups powdered sugar

 4 squares baking chocolate, melted

 4 whole eggs

 1 teaspoon peppermint flavoring

 2 teaspoons vanilla

 1 cup vanilla wafers, crushed

Method

1. In mixer, cream powdered sugar and butter.

2. Add eggs, one at a time, beat for a long time.

3. Add flavoring and melted chocolate.

4. Spoon 1/2 of crushed wafers into aluminum cupcake papers, about 1 teaspoon each.

5. Fill with chocolate mixture.

6. Sprinkle with more crushed wafers.

7. Freeze.

8. Serve with a dab of whipped cream topped with a cherry.

Mom’s note: These freeze well for up to 6 weeks.
