From the Shanley Home Ec. Department. Which one of the brothers brought home his recipes from Bachelor Foods?
Ingredients
PASTRY
2 cups flour
⅔ cup shortening
½ teaspoon salt
6-8 tablespoons ice water
FILLING
4 cups cherries, drained
3 tablespoons tapioca
1 cup sugar
⅛ teaspoon salt
¼ teaspoon almond flavoring
1 tablespoon butter
4-5 drops red coloring
Method
For pastry:
Mix shortening, flour and salt with pastry blender. Gradually add water. Let stand a few minutes and cut with pastry blender until ball forms.
For filling:
Mix cherries, tapioca, sugar and salt and let stand. Make crust. Line pan with bottom crust. Mix filling gently and place in pastry lined pan. Dot with butter.
Top with upper crust. Flute edge. Bake for 15 minutes at 450 degrees and at 350 degrees for 30 minutes.
