Ingredients
4 quarts cukes, sliced
6 medium onions, sliced thin
2 green peppers, chopped
3 cloves garlic
⅓ cup canning salt
5 cups sugar
3 cups cider vinegar
1 ½ tablespoons turmeric
1 ½ tablespoons celery seed
2 tablespoons mustard seed
Method
1. Do not pare the cucumbers, slice very thin.
2. Add onions, peppers and whole garlic cloves.
3. Add salt, cover with ice and mix thoroughly.
4. Let stand three hours, then drain well.
5. Combine remaining ingredients and pour over cukes.
6. Heat to boil.
7. Seal in pint jars. Makes 8 pints.
Make sure you slice the cucumbers very thin!
