Ingredients

 1 quart milk

 2 ½ cups firm bread, cut up into 1/2″ pieces

 4 eggs

 ½ cup sugar, divided

 ½ teaspoon salt

 3 tablespoons butter

 2 teaspoons vanilla

 1 ½ cups thinly sliced peeled apples

 ½ cup raisins

Method

Scald milk in saucepan and stir in bread and set aside. Beat 2 eggs plus 2 egg yolks, setting aside 2 egg whites. Stir in 1/4 cup sugar and salt. Slowly pour in milk, stirring constantly. Add butter and vanilla. Add raisins and apples. Place in buttered casserole. Place casserole in a baking pan filled with hot water. Bake at 350 degrees for 1 hour and 15 minutes. Beat whites and sugar. Spread over pudding. Return to oven and brown.
