Ingredients

 1 cup white rice

 6 cups water

 1 quart milk

 5 egg yolks

 1 tablespoon cornstarch

 ¾ cup sugar

 ½ teaspoon salt

 1 teaspoon almond flavoring

 5 egg whites

 ½ cup sugar

Method

1. Boil rice in water until tender (add a dash of salt.) Rinse with cold water and drain. Put in pan and add milk. Bring to a boil, stirring frequently. Boil 5 minutes or longer. Beat egg yolks. Add some of the boiled rice to yolks, stirring constantly so it won’t curdle. Add this mixture to remaining rice. Add cornstarch. Bring to a slow boil.

2. Put into large glass baking dish. While rice is baking, start beating egg whites until foamy. Then turn mixer on high and gradually add sugar until very stiff. Spoon over rice and brown in oven about 10 minutes.

3. Serve hot or cold.

Mom added this note: Add the cornstarch to the beaten yolks before the hot mixture is added.
