Ingredients

 1 jumbo egg, well beaten

 1 cup cold water

 3 cups flour

 3 teaspoons baking powder

 1 teaspoon salt

Method

Use a large mixing bowl:

Beat egg well. Add water and beat to froth. Add flour, baking powder and salt. Stir by hand. Drop by small spoonfuls into rapidly boiling salted water. They will expand so be sure to use a large kettle. They are done when all float to the top of the water, about 8-10 minutes. Lift out of water with slotted spoon and drop into simmering beef or chicken gravy and serve at once. Melted butter may be poured over dumplings in place of gravy.
