6 1/2 dozen cookies
Ingredients
1 cup raisins
1 cup water
1 ½ cups sugar
¾ cup shortening
2 eggs
2 ½ cups whole wheat flour
2 cups quick rolled oatmeal
½ cup chopped nuts
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
½ teaspoon baking powder
½ teaspoon ground cloves
Method
1. Heat raisins and water to boiling; reduce heat to medium. Simmer uncovered
until raisins are plump, about 15 minutes. Drain raisins, reserving liquid. Add
enough water to reserved liquid to measure 1/2 cup.
2. Heat oven to 400 degrees. Mix sugar, shortening, vanilla and eggs in large
bowl. Mix in raisin liquid; stir in remaining ingredients. Drop dough by
rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake until
light brown, 8 to 10 minutes. Immediately remove from cookie sheet.
