Plan to start this dessert a few days ahead of the day you plan to serve it.
Ingredients
1ST LAYER
6 egg whites
½ teaspoon cream of tartar
¼ teaspoon salt
1 ¾ cups sugar
2ND LAYER
1 large package cream cheese, softened
1 cup sugar
1 teaspoon vanilla
2 cups whipping cream, whipped
2 cups miniature marshmallows
TOPPING
1 can cherry pie filling
1 package frozen strawberries, thawed
1 teaspoon lemon juice
Method:
1st Layer:
Beat egg whites, cream of tartar, salt and sugar for 15 minutes or until glossy. Put in greased 9 x 13 pan, bake for 60 minutes at 275 degrees. Turn off oven and leave in overnight.
2nd Layer:
Beat cream cheese, sugar and vanilla until smooth. Fold together whipped cream, miniature marshmallows, with cream cheese mixture. Spread on 1st layer and refrigerate for one day. Top with topping mixture and serve.
