Ingredients

Pam

 2 cups fresh or frozen blueberries

 1 tablespoon fresh lemon juice

 1 cup quick rolled oatmeal

 ½ cup stone ground whole wheat flour

 ⅓ cup brown sugar

 1 teaspoon cinnamon

 ⅓ cup oil

 5 drops almond extract

Method

1. Preheat oven to 350 degrees. Use a 1 1/2 quart souffle dish or other small

baking dish. Spray pan with Pam and set aside.

2. If using fresh berries, wash and pick over. Drain and pour into prepared pan. If frozen, spread them, unthawed, in pan. Sprinkle lemon juice over berries.

3. In mixing bowl, combine oats, flour, brown sugar and cinnamon. Mix well. Pour oil and almond extract, if desired, over all and mix thoroughly. Sprinkle oat mixture over blueberries. Spread in an even layer.

4. Bake 40 to 45 minutes, until berries are bubbling and top is brown.

5. Serve hot, warm or cold, with vanilla ice cream.
