Ingredients

 3 cups sliced rhubarb

 ⅓ cup sugar

 ¼ cup orange juice

 ¾ cup whipping cream

 2 cups halved strawberries

whole strawberries, optional

Method

1. In a saucepan combine rhubarb, sugar, orange juice and a dash of salt. Bring to a boil.

2. Reduce heat. Cover and simmer for 7 minutes or until rhubarb is tender. Cool slightly.

3. Pour into blender. Cover and blend until smooth. Chill.

4. Just before serving, whip cream. Fold rhubarb mixture into whipped cream just until it is streaked.

5. In chilled glasses layer rhubarb mix with strawberries. Top with a whole

strawberry and serve.
