Ingredients

 1 cup butter

 1 cup sugar

 1 cup molasses , light

 1 tablespoon vinegar

 2 eggs, slightly beaten

 5 ½ cups flour

 1 teaspoon cinnamon

 1 teaspoon ginger

 1 teaspoon soda

 ½ teaspoon salt

FROSTING

 2 cups powdered sugar

 ⅓ cup softened butter

 ½ teaspoon vanilla

 2-3 tablespoons milk

Method

1. Combine butter, sugar, molasses and vinegar in 2 quart saucepan and bring to a boil. Remove from heat and cool to room temperature. Add eggs to cooled mixture.

2. Mix dry ingredients and stir into dough until smooth and satiny. (At this point dough is extremely soft). Divide into 2 portions. Wrap in plastic wrap and chill at least 2 hours. When removed from refrigerator, roll and cut in any shape you prefer. No flour is needed when rolling out this dough. Bake on lightly greased sheets at 375 degrees. Baking time depends upon size and thickness of cookies.

After cookies have cooled, ice with butter frosting. These cookies can be eaten without icing. Icing is used mainly for decorating for special occasions.
