Ingredients
4 cups thinly sliced zucchini
12 ounces ground beef
½ cup chopped onion
2 cloves minced garlic
1 cup cooked rice
½ cup tomato sauce
½ teaspoon salt
½ teaspoon oregano
¼ teaspoon pepper
1 egg, beaten
½ cup cottage cheese
½ cup shredded cheddar cheese
Method
1. Cook zucchini for 1-2 minutes in salted water. Drain well. Cook beef, onion
and garlic until browned. Drain off extra fat. Stir in rice, tomato sauce, salt,
oregano and pepper.
2. Combine egg with cottage cheese. Arrange half the zucchini in bottom of 10 x
6 x 2 buttered baking dish. Sprinkle lightly with salt. Spoon meat mixture over
this. Spread cottage cheese mixture over meat. Top with remaining zucchini slices.
Sprinkle with salt (lightly.) Bake in 350 degree oven for 15 minutes. Spread with
cheddar cheese. Bake 10 minutes more.
