Ingredients

5 slices unfried bacon

5 fresh tomatoes or 1 16 ounce can

8 slices cheese , American or Velveeta

1 medium onion, diced

½ cup rice, uncooked

6 cups zucchini, sliced and unpeeled

pepper to taste

Method

1. Cut bacon in half.

2. Arrange in casserole as follows:

3. First layer 1/2 of the zucchini.

4. Half of the tomatoes.

5. All of the onion.

6. All of the rice.

7. Half of the cheese.

8. Half of the bacon.

9. Repeat, ending with bacon on top.

10. Bake at 350 degrees for 1 1/2 hour.
