What do you do with all of that zucchini in the garden?

Ingredients

1 can cream of mushroom soup

½ cup sour cream

4 cups cooked sliced zucchini

1 cup carrots, shredded

¼ cup onion, chopped

2 cups herb stuffing

¼ cup melted butter

Method

1. Mix butter with stuffing.

2. In a 2 quart casserole, layer half the herb stuffing. Mix rest of ingredients

together and top with remaining herb stuffing.

3. Bake.
