A recipe from the Dakota Farmer
Ingredients
1 ½ pounds ground beef
½ cup chopped onion
½ cup diced celery
2 tablespoons oil
1 16 ounce can tomatoes, including liquid
1 9 ounce can whole kernal corn, drained
1 teaspoon salt
1 teaspoon oregano
1 teaspoon chili powder
⅓ cup yellow cornmeal
1 small can slice ripe olives
parmesan cheese, grated
Method
1. Brown beef, onion, celery in oil. (The original recipe calls for lard. Go for it!!)
2. Add tomatoes, including the liquid, corn, salt, oregano, chili powder and corn
meal.
3. Cook slowly, stirring occasionally for 10 minutes.
4. Add ripe olives, drained. Put mixture into a greased casserole. Sprinkle top
with Parmesan cheese. Bake at 350 degrees for 25 to 30 minutes.
