This is one of my favorites!!
- 1 cup dates, cut up
- 1 teaspoon soda
- 1 cup boiling water
- 1 cup sugar
- 1 heaping tablespoons butter
- 2 eggs, well beaten
- 1 teaspoon vanilla
- 2 cups flour
- dash salt
- ¾ cup walnuts
- Frosting
- 1 cup cream
- 1 cup brown sugar
- 1 teaspoon vanilla
| Cake:1. Mix dates, soda and boiling water together and allow to cool. |
| 2. Blend butter with sugar, add eggs (well beaten) plus the salt, vanilla and date mixture. Mix in flour and nuts. |
| 3. Pour in 9×13 pan or a bar pan, and bake 30 minutes (cake pan) or 20 minutes (bar pan). |
| Frosting: |
| 1. Cook cream and brown sugar to softball stage. Add vanilla. |
| 2. Beat with electric mixer until it forms ripples. |
| 3. Spread on cake. |
