1. Dissolve yeast in water.

2. Set aside.
|
|
3. Combine milk, butter, sugar and salt.
|
|
4. Cook to lukewarm.
|
|
5. Stir in 2 cups flour and beat until smooth.
|

6. Add eggs one at a time, beating well after each addition.
|
|
7. Add yeast mixture, peel and juice.
|
|
8. Add remaining flour.
|
|
9. Cover, let stand 10 minutes.
|
|
10. On lightly floured board, knead dough until smooth and elastic, 6-8 minutes.
|
|
11. Place in greased bowl.
|
|
12. Cover and let rise until doubled (1 hour.)
|
|
13. Combine filling ingredients, set aside.
|
|
14. Punch down, divide into thirds.
|
|
15. Let rest 10 minutes.
|
|
16. Roll first into 1/4″ thick rectangle.
|
|
17. Spread 1/3 of filling on.
|
|
18. Roll up jelly roll fashion.
|
|
19. Cut into 1 inch slices.
|
|
20. Place in well greased muffin pans.
|
|
21. Repeat with rest of dough.
|
|
22. Let rise 1 hour.
|
|
23. Bake at 400 degrees in muffin pans.
|
|
24. Repeat with rest of dough.
|
|
25. Let rise 1 hour.
|
|
26. Bake at 400 degrees for 12 minutes.
|
|
27. If desired, glaze with powdered sugar with orange juice.
