1. In large bowl, combine 1 1/2 cup flour, mashed potatoes, sugar, undissolved yeast and salt.

2. Heat butter and water until very warm (120-130 degrees).

3. Gradually add to dry ingredients.
|
|
4. Beat two minutes at medium speed of electric mixer, scraping bowl occasionally.
|
|
5. With spoon, stir in whole wheat flour and enough remaining white flour to make a soft dough.
|
|
6. Knead 6-8 minutes.
|
|
7. Place in greased bowl, turning to grease top.
|
|
8. Cover and let rise about 40 minutes in a warm place.
|
|
9. Divide into two portions.
|
|
10. Roll into 8″ rounds or two loaves.
|
|
11. Place on greased baking sheet.
|
|
12. Let rise until double in bulk (25-30 minutes).
|
|
13. Slash each loaf 1/4″ inch thick (3 slashes).
|
|
14. Sprinkle with whole wheat flour.
|
|
15. Bake at 400 degrees for 25-30 minutes.
