- 1 cup pinto beans, cleaned and soaked overnight
- ¼ onion, chopped
- 1 clove garlic, minced
- 2 tablespoons shortening
- salt
- green onions, to garnish
- cheddar cheese, to garnish
| Soak beans overnight in hot water. Drain. Saute onion and garlic in oil. Add beans and cook 2-4 hours. Mash cooked beans. Fry in pan in shortening. Salt to taste. Garnish and serve. |
